A national cookie company that does delicious pre-dawn deliveries could open up shop near the University of Memphis.
Insomnia Cookies, founded in a college dorm room in 2003 and with more than 90 locations across the U.S. today, was listed on a $100,000 building permit filed Tuesday, Sept. 13, for “interior alterations” at 545 S. Highland St.
Ciara Neill, director of marketing for Loeb Properties, which owns the Highland Strip building, said they are currently in negotiations for that bay and are excited about filling out the entire Strip with new tenants.
“We are just wrapping up our renovation work,” Neill said. “There should be some exciting and interesting tenants.”
